The meat value chain is very complex, driven by the vast number of possible cutting and processing combinations for each carcass. That's why it has been challenging to make optimal decisions, which often leads to ineffective production, overstocking of materials, and food waste.
Between 20-50% of sales in the meat industry are push-driven, which means that companies push products into the market with discounts because they struggle to achieve a balance between supply and demand. A significant portion of these push-driven sales are done with negative margins.
Völur's Carcass Value Optimization solution addresses these challenges by leveraging industry expertise, data science, and AI technology to improve sorting, cutting, processing, planning, and scheduling. The solution creates value through a more profitable balance between supply and demand, increased value by weight of finished products, and higher customer demand satisfaction.
